QUEBEC CITY — Fairmont Le Château Frontenac has announced two new F&B appointments to accompany a major renovation project of its restaurant outlets.

Alexandre Usseglio has been appointed director of Food and Beverage. With 15 years of hospitality experience, Usseglio has held various F&B positions across the globe; he’s been restaurant operations manager at Mandarin Oriental in Hong Kong, assistant director of Food and Beverage at Hotel Mulia Senayan in Indonesia and was most recently the director of Food and Beverage at The St. Regis Hotel in China.

Stéphane Modat is also joining the team. The new restaurant chef will develop restaurant concepts during the renovation, which will be finished in late 2013. Modat has worked at the Michelin-star restaurant, Le Jardin des Sens in Montpellier, France and co-founded two restaurants — Utopie and Mc2. He also co-wrote two books (Les Recettes de Papilles et Molécules as well as the collection Papilles pour tous!) and was a chef in the television series, Papilles.
