ROSSLAND, B.C. — Takashi Harada is the new executive chef at The Josie Hotel, Autograph Collection and The Velvet Restaurant and Lounge in Rossland, B.C.

Chef Harada began his culinary career at the age of 10, making simple Japanese dishes with his mother. Over the years, he’s worked in destination hotels and resorts around the world, including Four Seasons Hotels & Resorts in Vancouver, Toyo, Lanai in Hawaii, Hualalai in Hawaii, St. Kitts and Nevis in the Caribbean, and most recently, the Fairmont Jasper Park Lodge.

“We often forget the complexity of each individual ingredient,” says chef Harada. “It’s important to slow down and appreciate the ingredients, and it’s my goal to bring this philosophy of cooking and teaching to the kitchen at The Velvet Restaurant and Lounge. If I could sum up my cooking style, it would be bold and flavourful, while still simple and approachable. I’m excited to work with the team to build on the culinary programming. I grew up in Richmond, [B.C.] and was spoiled for choice with the Asian culinary scene. I’d love to share this diversity with our guests at The Velvet Restaurant and Lounge.”
