Couple drinking alcohol at Hôtel de Glace de Québec to Open its First Ice Restaurant

MONTREAL — The Hôtel de Glace de Québec is celebrating its 25th anniversary with the opening of its first ice restaurant on Jan. 17, 2025. Merging the culinary expertise of the Fairmont Le Château Frontenac with the craftsmanship of the sculptors at the Hôtel de Glace de Québec, this venue will offer 52 guests a three-course meal every Friday and Saturday until Mar. 15, 2025.

The meal will begin with a warm ball of bread served with boreal whipped butter, followed by a pastry-crusted soup with wild boar bacon consommé, foie gras and a vegetable brunoise with porcini mushrooms, also available in a vegetarian version. For the main course, guests can choose between slow-cooked beef short ribs served with celeriac purée or a nori-crusted panisse with rich vegetable jus, both accompanied by root vegetables in homage to comforting winter dishes in Quebec. Finally, dessert will take the form of a snowball made of coconut and passionfruit.

Guests will enjoy their meals amidst fur-covered ice benches for comfort, while subtle lighting highlights the sculptures created by Quebec artists. These works, embedded in the walls, will represent the four elements: fire, wind, water, earth.
