TORONTO ― The Ritz-Carlton, Toronto has a new chef at the helm of its TOCA restaurant. Horacio Macias Leon will bring his international flair to the restaurant’s classic Italian cuisine in the heart of the city. Along with restaurant partner and chef Oliver Glowig, the two began their collaborative menu development for the restaurant with Da Umbria a Toca, a four-course tasting menu, held last week on March 31, 2022. This menu was inspired by the coming of spring and the culinary tradition of Umbria, followed by the launch of refreshed breakfast, lunch and dinner menus. 

“Chef Horacio is an extraordinary addition to The Ritz-Carlton, Toronto and TOCA culinary team,” says Guillaume Benezech, general manager, The Ritz-Carlton, Toronto. “We are confident that his passion, creativity and expertise will create memorable experiences for our guests and continue to provide the gold standard in dining.”

Along with the addition of chef Horacio comes the introduction of all-day dining at TOCA, featuring breakfast, lunch and dinner options for guests to enjoy seven days a week. The menus are a combination of the best local ingredients and seasonal flavours, with classic Trattoria experiences such as pasta finished in large parmesan wheels and fresh prosciutto sliced in the dining-room.
