NORTH VANCOUVER, B.C. — Seaside Hotel, a luxury boutique hotel in North Vancouver, has announced the opening of its on-site restaurant Seaside Provisions.

The restaurant design blurs the lines between restaurant, bar and lounge to create a holistic dining experience with a chic beach-house-inspired ambience. Key features include an open kitchen with bar seating and a raw bar, as well as a more intimate area — the Wine Cellar — which seats up to eight guests and includes a chef-curated set menu.

The chef at the helm of the new project is Sandro Oliveri, who brings a wealth of international inspiration to the restaurant’s seafood-focused menu. The menu specializes in “coastal small plates,” offering dishes such as striped-bass ceviche with nduja, cucumber, pollen and lemon ($13); salmon caviar with tater tots, crème fraiche and smoked salmon ($10); humboldt squid with chermoula, quinoa tabbouleh, tahini and chili oil ($19); and Salt Spring mussels with white wine, nduja, garlic and broccolini ($19).

Happy hour will be offered from 2:30 p.m. to 5:30 p.m., and again from 9:30 p.m. to closing, Wednesday through Sunday, featuring a bold cocktail program, freshly shucked oysters and bar snacks. The restaurant will also be open for brunch daily between 8 a.m. and 2:30 p.m.
