NORTH HATLEY, Que. — Manoir Hovey is celebrating Canada’s 150th all month long with a special tasting menu at its restaurant, Le Hatley.

The restaurant’s executive chef, Francis Wolf, has designed an eight-course evening tasting menu showcasing products from across the country. The menu is paired with a Canadian wine selection sourced from top Quebec wine regions, as well as Niagara and Osoyoos.

Chef Wolf’s menu features items such as lobster with celtuce, American sauce, cherry tomatoes, sea arugula and pickled seaweed; foie gras au torchon with mint, tomato jam, onion bread, spruce and sea peas; and Fitch Bay goat calf sausage and grilled loin with lardons, kale, radish, sea asparagus and Hutterite beans.

The Canada 150 menu is available through July 31.
