OTTAWA — Louis Simard is the new executive chef at Ottawa’s Fairmont Château Laurier.

“Many people have asked me what my cooking philosophy is; that’s easy — out-of-the-box ideas, paired with bold flavours, using fresh and delicious ingredients,” said Simard, explaining what he’ll bring to the plate at the hotel.

Simard has more than 15 years of culinary experience, having worked at five Fairmont properties across Canada and the U.S., including Fairmont Royal York, Fairmont Banff Springs and Fairmont Miramar in Santa Monica where he served such celebrities as Donald Sutherland, Woody Harrelson, Gene Simmons and Denise Richards. Simard was part of the opening team at the Fig Restaurant (located at the Fairmont Miramar Hotel & Bungalows, Santa Monica, Calif.) — voted best new restaurant opening of 2008 by the Los Angeles Times.
