CALGARY — The Fairmont Palliser has unveiled Hawthorn Dining Room & Bar, its new food-and-beverage outlet. The opening marks the first time in more than 60 years that a new outlet has been added to the historic property.

Taking the place of the former Rimrock Dining Room and Oak Room Lounge, the restaurant received a complete redesign courtesy of Calgary’s Frank Architecture & Interiors. The design hints at of the hotel’s beginnings as the central station and preserves historic features, such as Charles Beil’s 1962 mural, the Heraldic Badge and much-loved fireplace. These features are now accompanied by rich, vintage-inspired details intended to give patrons a feeling of approachable luxury and comfort. 

Newly appointed executive chef Bern Glatz and restaurant general manager Dustin Makarenko have ushered in a new vision of modern, stylish dining. Offerings will focus on a constantly rotating menu of “sociables” and family style dining, utilizing seasonal ingredients from Alberta’s most trusted producers, farmers and suppliers — including Benchmark Beef, Lambtastic and Lowens.

“I’m excited to be working with the Hawthorn team because of their above and beyond willingness to support local,” says Glatz, “I’m able to utilize some of the best local farmers and suppliers in Alberta and create a menu that truly reflects the spirit of Calgary.”

The Hawthorn Bar offers an innovative cocktail menu that utilizes the exclusive Hawthorn Gin from Eau Claire Distillery, along with the exclusive ODB (Our Daily Bread) brew with Last Best Brewery, which utilizes the leftover bread from the kitchen to ferment the pale ale.
